Dough

2 T Yeast
1/4 C Warm Water
3/4 C Sugar
2 Egg Yolks
1 C Milk/Buttermilk Warm
3 Sticks Butter Melted
5 C Flour
1/4 t salt
1/4 t vanilla

Carmel Topping

Filling

2 C Brown Sugar
4 t Cinnamon
Melted Butter
1 C Pecans

Note

This is also the dough for rugelach and coffee cakes and Carmel pecan cake and pecan rolls.
  

Instructions

Dissolve yeast and 1 teaspoon sugar in 1/4 cup of water.  Let bubble and double. In a large bowl put in flour and make a well in center of dough.  Add rest of ingredients. make sure the butter and the milk are warm not hot.  Add puffy yeast. Mix thoroughly with wooden spoon. Dough should be soft, smooth and elastic. Let raise until double in clean bowl. Cover with a cloth. about 1-1 1/2 hours.

Carmel pecan coffee cake in big bundt pan 12 cup size pan.

Makes 2. Or divide recipe in 1/2 and only make 1

Carmel topping:
  • 1/13 C. Brown sugar
  • 1 C. butter
  • 4 teaspoon. Light Karo syrup
  • 1 teaspoon. water
  • Melt butter and mix in rest of ingredients, stirring until smooth.
  • Pour topping into 2 pans.
Filling:
  • 2 C. brown sugar
  • 4 teaspoon. cinnamon
  • melted butter
  • 1  cup pecans
  • Mix together cinnamon and sugar. Divide dough in 1/2 roll out one at a time. brush with melted butter. 
  • Sprinkle on 1/2 of filling on each one and 1/2 of pecans. 
  • Roll up into a long log. cut in 12 pieces and place in greased tube pan should be slightly more than 1/2 full. 
  • Cover and let raise until double about 1-2 hours.  Bake at 350 for 30-40 min. Turn pan upside down right from oven on a cooling rack and spoon any dripping carmel back on cake.

Chocolate chip coffee cake:

Filling:

1 cake

  • 1 cup chocolate chips melted with 2 TABLESPOON butter
  • Spread on rolled out dough 1/2 recipe of dough.
  • Sprinkle with finely chopped nuts and a bit of cinnamon.
  • Roll up dough into a log. form into a circle and place in a 9" tube pan.
  • Sprinkle with streusel topping. Let raise until double about 1-2 hours.

Bake 35-40 min. at 350

Streusel

topping: 1 cake

  • 1/2 C. flour
  • 1/2 C. Brown sugar
  • 1 1/2 teaspoon. cocoa
  • 1/4 C. butter 
  • 1/2 C. Walnuts
  • 1/2 C. Chocolate. chips

Mix first 4 ingredients. until crumbly stir in nuts and Chocolate chips
sprinkle on top of dough. then let raise and bake
